1. July 4th, a holiday commemorating the adoption of the Declaration of Independence on July 4th, 1776. 2. One of the truly fun holidays that involves not only a day off work but firecrackers as well.

POTATO SALAD
8 medium potatoes, cut into 1-inch cubes
6 eggs, hardboiled and chopped
1 green or red pepper, cubed
3 stalks celery, chopped
8 green onions, chopped
half a small cucumber, diced
2 cups mayonnaise (can be low-fat or fat-free)
2 tablespoons white-wine vinegar
1 teaspoon mustard powder
Freshly ground black pepper, to taste
  1. Place the potatoes in a medium-sized saucepan and cover with cold water. Bring to a boil, reduce the heat and simmer until tender, 10 minutes. Drain, rinse under cold water, and drain again.
  2. In a large bowl, combine potatoes, eggs, green or red pepper, celery, green onions and cucumber.
  3. In a separate bowl, combine mayonnaise, vinegar and mustard powder. Add to salad, stirring gently to combine all ingredients. Season with freshly ground black pepper to taste.

Serves 12.
